So I'm not sure whether to put this down as a dessert or a breakfast recipe!
At holiday meals, whenever the pies come out, I never know which kind of pie to eat, pumpkin or apple. (I usually end up having a slice of both). But with this oatmeal recipe, you don't have to choose!
Oatmeal Ingredients
- 1/4 c steel cut oats or 1/2 c rolled oats
- 1 c water or almond milk
- pinch of salt
- 1/4 c pumpkin
- 1 tbsp applesauce
- 1/8 tsp molasses
- 1 tbsp flax meal
- 1 tsp vanilla
- 1/2 tbsp maple syrup
- pumpkin pie spice to taste
Topping Ingredients
- Handful of rolled oats
- 1 apple, cut into very small pieces
- 1/4 tsp cinnamon
- 1/4 heaping tsp cornstarch
- 1 tbsp milk
Oatmeal Directions
Bring the water or milk to a boil, add the oats, and reduce the heat to low, cover, and cook for five minutes, stirring occasionally. Add the flax, pumpkin, applesauce, molasses, maple syrup, vanilla, and spices. Cook on low, stirring occasionally, until it reaches the desired consistency.
Topping Directions
Bake the rolled oats at 350 until they are slightly browned. Meanwhile, put the apple slices in a small ziploc freezer bag, add the cornstarch and cinnamon, and then the milk. Shake until everything is combined, and then microwave with the bag slightly open for 2 to 2 1/2 minutes. (Careful, the bag will be hot!) Pour the apples onto the oatmeal, top with the oats, and enjoy!
