Soft-Baked Peanut Butter Cookies


I'm not sure what's better - the cookie dough or the baked cookies! The best part about vegan baking is being able to eat the dough, so knock yourself out ;)


Ingredients:

• 1/2 c earth balance 
• 1/2 c granulated sugar
• 1/2 c brown sugar
• 1 tsp vanilla extract
• 1/2 c peanut butter
• 1 1/4 c gluten-free flour
• 1/2 tsp baking powder
• 1/2 tsp baking soda
• 1/2 tsp salt
• 1/4 c almond milk
• 1/2 c + chocolate chips (optional)



Directions: 

Preheat the oven to 375. Using a mixer, mix the softened earth balance, sugars, vanilla, and peanut butter until well combined. Then add dry ingredients until crumbly. Slowly add the almond milk until the dough is moist. Mix in the chocolate chips or other mix-ins. Scoop onto a cookie sheet and bake for about 8-10 minutes or until slightly browned. Let them cool for about 10 minutes and then serve!
