I've done it. I've achieved vegan junk food nirvana. I give you... Vegan Macaroni and Cheese.
Though this is probably not the healthiest of dishes, It definitely tastes like the real thing. And it was ridiculously easy to make. Use gluten-free pasta if you wish (I have used corn pasta and a rice/soy blend and they were both fantastic).
Ingredients
- 12 oz elbow pasta (gluten-free option) + 1 tsp salt
- 3 tbsp earth balance
- 1/2 c + 2 tbsp almond milk
- 1/2 c Daiya mozzarella shreds
- 1/2 c Daiya cheddar shreds
- Nutritional yeast to taste
- salt and garlic powder to taste
Directions
Cook pasta as directed on the package with salt. Drain, and add back to the pot on medium-low heat. Melt in earth balance and milk and stir until well combined. Add the daiya and stir until completely melted. You can adjust the ingredients to your liking. Add garlic powder and salt to taste, and then serve!
